I don't like the whole rating thing. Is it possible to get rid of the stars completely?

The 'My Rating' field is hard coded into the Add/Edit field because of the layout so you can't turn it off.

As a side note you can remove the column from your list view with the "view options" and from the details view by creating your own custom template. Copy the "collections.html" template and edit it to remove the HTML that displays the stars on the top right. Information about custom templates is in the included help and here for CDpedia but applies to the other apps as well.
