The notes field started out life as buying and selling related notes, shipping options and such, but it got a wider following as a more general field, so we placed it into the extras tab instead of the selling tab.
From a librarian's point of view, I use notes to comment on the physicality of the item being catalogued and comments on any other aspect - gift, condition, and so on.
